Easy Peasy Chicken Quesadilla’s w/Mango Salsa

I love having leftover chicken breast in the house.  One of my favorite things to do with it is make quesadilla’s! They are super easy and quick to whip up on a moments notice.  Not to mention you can add lot’s of extra’s to them!   If you don’t have any cooked chicken breast on hand…go get yourself a rotisserie chicken from the grocery store.  Delicious and readily available.  That’s exactly what I did today.  Chase knows when I bring home a rotisserie chicken that it’s quesadilla night.  Which is fine with him because in case you haven’t noticed already….we LOOOVE Mexican food.  He will usually eat anything as long as I give him something. It’s when I don’t have anything for him that shit really hits the fan.  Haha!

So anyways, making a quesadilla isn’t brain surgery.  I don’t even really have a recipe for it.  I just wanted to share what I do because it’s easy, quick, healthy and yummy.   It’s always nice to try something different during the week.  Especially for those pressed for time in the evening. The boys love these too.  Plus!  They are so versatile you can use whatever ingredients you want.  You can’t go wrong.  Chicken, shrimp, steak, veggies, beans, fruit-sounds weird but I get these amazing shrimp and mango quesadilla’s at our favorite Mexican place and they are soo good.  I think I need to try to make those!  You can experiment with different cheeses too.  Yum Yum.

Let’s start with the salsa.

Mango Salsa

  • 1 Large Avacado, halved and cut into small chunks.
  • 1 Large Mango, peeled and cut into small chunks
  • 1/4 cup Red Onion, finely chopped
  • 1 Large or 2 Small Vine Ripened Tomatoes, chopped into small chunks (I remove seeds.)
  • 1 Jalapeno, halfed, seeded
  • 2 Limes
  • Salt and Peppppa
  • Cilantro (I don’t use it, I hate it.) However it’s a staple in salsa so if you like it, by all means.

Put Avocado, mango, red onion and tomato in a bowl.  I usually use half of the jalapeño because I don’t like it really spicy.  So add however much what you want.  Then, squeeze one whole lime over the bowl and season good with salt and pepper.  If you feel it needs more lime juice, add more!  We like it really limey!  Make at least 15-20 minutes ahead of time to let the flavors combine.

Mmmm how good does this look?  Play around with it and add as much or as little ingredients as you want.  

Chicken Quesadilla’s

  • Rotisserie Chicken or leftover chicken, shredded
  • Refried Beans (use whatever you want….black beans, refried black, etc.)
  • Whole Wheat Tortilla Shells
  • Extra Sharp Cheddar, Grated
  • Taco Seasoning

Aaaaaaand that’s all you need.  Like I said, no recipe.  Add as much chicken and cheese as you wish.  Here is what I do…

Take one of the tortilla shells and spread refried beans on the bottom.  Place it in large skillet.  Add shredded chicken on top.  Then sprinkle some taco seasoning over the whole thing.  Add the grated extra sharp cheddar or whatever cheese you prefer.  Place other tortilla on top and press down.  Cook over medium heat about 8-10 minutes on one side, then flip over for a few more minutes.  Cut into wedges and service with salsa and a dollop of sour cream.

Don’t forget to make your taco seasoning!  Mmmmm this is so good.  Enjoy!

Roasted GAAAAHHHLIC Holy Guacamole!

It’s TACO TUESDAY Y’ALL!  Usually once a week I make Taco’s for dinner.  Who doesn’t love taco’s right?  Super easy and quick!  Sometimes I do lean ground turkey, other times I do 90/10 ground beef.  It’s usually turkey though.  But not ground turkey breast.  Yuck, yuck that is dry as a bone!  Chase loooooooves taco’s.  In case you missed my last post, here is the homemade taco seasoning recipe that I use.  It is fabulous!

Homemade Taco Seasoning

We like to get creative with our tacos.  Experimenting with different salsa’s and toppings.  However one thing we are always consistent with is our beloved Guac!  Guacamole just makes everything taste better.

Whenever we go to Mexico we always stay at the same place in Cabo.  They make the BEST guacamole.  I swear I gain 5 pounds just from the guac and chips when I’m there!  It’s to die for.  They make it table side at one of their restaurants so the last time I was there I really watched carefully to see what their secret was.  And it was……..GAAAAAAHLIC BABY!  They made a traditional style guacamole but added roasted garlic.  YUM!  It it soo good.  I don’t always add it to ours, especially if I’m pressed for time.  Usually I do though.  It gives it that extra….”hmmmm, what is this amazingness?”  I found a recipe online that I primarily use  but have altered a little bit to my liking and it’s AMAZING.  I like to have something to go off of.  However, I use way more lime juice.  I would probably use a whole lime at least.  Also, I HATE, HATE, HATE cilantro.  I don’t even know if HATE is a strong enough word.  So I don’t use it.  But if you love it, knock yourself out!  This is my favorite guacamole ever.  Enjoy!  (And be careful chopping those jalapeños!)

Ingredients

3 large garlic cloves, unpeeled
3 ripe medium avocados*
1 small tomato, seeded, juiced and diced (about 1/3 cup)
1/4 cup coarsely chopped cilantro
2 tablespoons jalapeño pepper, stemmed, seeded and minced (you’ll need one pepper)**
1 tablespoon fresh lime juice, plus more if desired (you’ll need about 1/2 lime)
1/2 teaspoon salt, plus more to taste                                                                                                           1/8 cup finely chopped red onion

Instructions

Place the unpeeled garlic in a small skillet over medium heat; cook, turning occasionally, until soft and blackened in spots, 10 to 15 minutes. Cool, then slip off the skins and mash the garlic with a fork.
Scoop the avocado flesh into a medium bowl.* Add the roasted garlic, diced tomato, cilantro, jalapeño, lime juice and salt. Coarsely mash everything together, being careful to leave some chunks. Taste and add more salt and lime juice if desired (you can also add some of the jalapeño core if you want more heat; just add it slowly). Transfer to a serving bowl and place plastic wrap directly on the surface of the guacamole. Refrigerate until ready to serve.
*To prepare the avocados, cut them in half lengthwise. Strike the pits with the edge of a sharp knife, twist and loosen to remove. Using a small knife, cut a grid in each half (slices should be about 1/2-inch apart), then scoop the cubes of flesh out of the avocado with a soup spoon.
**To prepare the jalapeño, use a small knife to slice straight down along one side, removing just the flesh. Turn the pepper and repeat with the remaining sides. All of the seeds and most of the veins — the extra hot stuff — should remain in the core. Mince the flesh and reserve the core in case you want to add more heat to your guacamole. Try to minimize contact with the seeds and be sure to wash your hands well after cutting; definitely do not touch your eyes.

The Pasta That Got Me Engaged. Chase’s Favorite Dish!

When my husband and I were with out our precious cherubs…aka Carter and Christian, I used to cook ALL the time.  I was new to Nashville and didn’t have a job.  I would make homemade pies, pasta’s, you name it!  I was constantly trying new things.  Back when we were just engaged, I used to be online looking for new recipes to try for my future hubby.  We never lived together before we got married…so I couldn’t wait to be co-habitating and make him all of this yummy food.  I can hear my feisty grandma in my head now…”Now why would you want to move in with a man before you got engaged?  That’s bullshit.  He’ll never marry you!  And then, what do you have to look forward to once you get married?  It goes back to the way it was!  There’s no excitement.  It’s….okay let’s get married and then go back home.  So you see there is no sense in “playing house” now.  Wait till you got a ring on your finger and then get married.” Hahaha, God bless that woman.  She was smart though.  And I do agree with her to some extent.  Needless to say I came from an old fashioned family.  I always tease my husband and say, “I would encourage our boys to move in with a girl before they got married.  Because if I would’ve known that you couldn’t change a light bulb or boil noodles, or pick up your underwear off the floor…things may have been different.”  Hahaha.  Ok I’m kidding.  Chase is good at many things.  When it comes to being domestic and handy, forgetta bout it.

So anyways, where was I?  Well, this pasta didn’t really get me engaged.  That was a joke.  However I think that once Chase realized after eating this deliciousness what a fabulous creature he had in front of him, he wasn’t turning back!

Behold, the 5 ingredient pasta!  LEMON SPAGHETTI.  So if you don’t like lemon’s your not gonna like this pasta! Clearly. People go crazy when I make this.  Except for my mother…she hates it.  Which is pretty typical.  “Lemons don’t belong in pasta!”  This is a recipe I discovered about 8 years ago from Giada.  I love really light pasta dishes with minimal ingredients.  Giada has a few of them.  This one is amazing!  Goes really well as a side dish too. Chase likes to devour it as a main course with a piece of crusty bread.  The boys enjoy it too, which is a rarity. I love the simplicity of it.  Really good leftover too.  Anything you can make in advance is a winner in my book.  Make the sauce ahead of time and then when your ready to eat just boil the noodles and put it together.  Super fast.  So make it! You’ll love it.  It’s the #1 most requested dish in my house and Chase and Carter’s FAVORITE pasta.

Here is what you need:

Olive Oil, Lemons, Parmesan Cheese, Spaghetti, Salt & Pepper!  NOTE:  This recipe calls for basil.  I don’t use it because Carter doesn’t like it.  However if it was just me I would definitely be adding it.

Make sure you scrub your lemon’s really good.  Then grate yourself 1 Tablespoon of lemon zest.  We like it really lemony so I use about 4 or 5.

Put the zest aside and juice 1/2 cup of lemon juice!

Pour lemon juice in a bowl, then add 2/3 cup of olive oil.

Add 2/3 cup of grated parmesan cheese.

Add salt and pepper.  Now whip it!  Whip it good!  Ok I think I’m funny.

Add 1lb. of spaghetti to a pot of boiling water.

VERY IMPORTANT:  Make sure you heavily salt the water.  You will use some of the cooking liquid later to flavor the pasta.  I usually do about 2 TBS.

When the noodles are done, grab a coffee mug and fill it up with the cooking water.  Then strain your noodles!

Return your noodles back to the pan, add the lemon/olive oil mixture.

Then add the lemon zest!

Slowly add the cooking water.  About 1/4 cup at a time.  You don’t need very much!  Just enough to loosen the pasta up a little bit.  I usually end up using about a 1/2 cup.  Mix it all up!

Sicilian Rice Ball Casserole: The best thing I’ve eaten all year!

One of my favorite, favorite, FAVORITE Sicilian dishes is Arancini.  For those of you that don’t know what it is….I feel sorry for you.  Really I do because you have missed such a delicious part of life thus far. But it’s not too late.  You still have time.  Arancini are stuffed rice balls, coated with breadcrumbs which are then deep fried.  The center is filled with meat sauce and peas.  The rice is also mixed with cheese to help the ball take shape.  In turn what you have is this incredibly crispy on the outside, cheesy gooey on the inside big ball of awesomeness.  There are no other words to describe it.

Arancini originated in Sicily and my family has been making them for as long as I can remember.  Usually around the holidays because they are a lot of work. Don’t even try to buy these at the store.  I’ve seen them at Italian Markets before already made and take-home-ready….and I’ve tried them.  YUCK!  You really have to make them yourself.

The name derives from their shape and color, which is reminiscent of an orange (the Italian word for orange is arancia, and arancina means “little orange”).

 

So as you know, I did say deep fried.  Remember “everything in moderation” my favorite saying.  (Pffff.)  Well I look forward to going to Michigan because I know my little Sicilian Aunties are going to have Arancini for me.  And lasagna.  And pizza.  And chicken parmesan.  And cannoli’s.  It’s the best thing ever.  I get indigestion thinking about it.

Well, one of my favorite places to go when I’m looking for a healthy recipe is Skinnytaste. I’ve made a lot of her recipes.  Some are good, some are ok.  But I’ve never found anything that has knocked my socks off.  (Maybe because it’s “healthier”….go figure!)  Until, a couple weeks ago when my mom was in town.  Since she doesn’t like anything…and totally went crazy over this, I knew it was good!

Braces yourselves……………I found the MOST AMAZING dish called Sicilian Rice Ball Casserole and it’s TO DIE FOR!!!  I’m usually immediately turned off by the word “casserole.”  I’m not a casserole kinda girl.  I wouldn’t even really call this one.  But this, well this is just a piece of heaven in your mouth. It’s like a healthy arancini cake! Made with ground turkey and a little bit of sausage instead of beef.  Also, it’s not deep fried.  I thought there was definitely no way this could even compare to my beloved Arancini.  WRONG! I flipped out.  If your doing Weight Watchers, Gina (the founder of Skinnytaste) posts all of the WW points on her recipes.  I wish I could take credit for this awesome dish.  But I’m really not that creative.  Most of the time I just manipulate other people’s recipes to my satisfaction.  Rarely have I ever created something of my own.

I’m a very visual person.  I like to “see” things.  I find it easier when I’m cooking.  So I recreated this recipe for everyone with lots of pictures to help you along the way.  It’s time consuming, but worth it.  However, make the sauce a day or two beforehand.  I made it the day of and it made the process that much longer.  Or don’t make your own sauce and just used jarred as a short cut.  My favorite jarred sauce is RAOS Marinara.  It’s the best one out there for sure!  It’ll run you about $8.99 a jar though.  Why you ask?  Because it’s the best…duh.  And good ain’t cheap sometimes.  (That’s the southern coming out in me…It’s been a whole 6 1/2 years since I uprooted to Nashville.)  Pretty soon I’m gonna be saying “fixin.”  I’m fixin’ to make you some food y’all!! Okay I’ve had 2 glasses of red wine already so forgive me.  Try this…your stomach and waistline will thank you.

Lastly, like I mentioned earlier, this dish takes time.  Make the sauce ahead of time and the rice if you can.  I made it all at once and spent about 3 hours in my kitchen.

Here is what you need: Prepare to be mind blown!

Chicken Broth, Breadcrumbs, (2 eggs, not 3!) Sweet Italian Sausage, Lean Ground Turkey, White Long Grain Rice, Basil, Carrots, Onion, Garlic, Crushed Tomatoes, EVOO, Sweet Peas, Mozzarella Cheese and Pecorino Romano.  

I already made the sauce…here it is. Filetto di Pomodoro Recipe Make it ahead of time so it’s not so labor intensive the day of.

Filetto di Pomodoro is AWESOME.  The recipe is simple and is great for when your trying to watch it because she doesn’t use a gallon of olive oil.  Just good quality ingredients.  

So there is a bit of prep work in order to make this…

You will need 2 cups of long grain white rice with 1 tsp. of kosher salt.  Cook it according to package directions and then set aside.  You can make this ahead of time too!

Get some Pecorino Romano Cheese and grate it, 1/2 cup.  Mmmm Nice and strong!

Weigh 10oz. of Lean Ground Turkey and 2.5 ounces of Sweet Italian Sausage.

Start with the sausage. Remove the casing and break it up with a wooden spoon over medium high heat.

Add the ground turkey to it.

Then add 1/4 cup of minced onion!

Cook it all together until nice and brown!

Add 5oz. of peas and 1/2 cup of sauce.  (So the recipe calls for that amount.  However I found it to be too many peas and not enough sauce!  So I do 3/4 cup sauce and about 3 oz. of peas.  Do what you wish!)

Mix it all up and simmer covered for 2o minutes.  

While the sauce simmers, grab your bowl of rice!!

Add the sauce, eggs and pecorino romano cheese.  Mix it all up!

Done with the rice! Ok, now you are ready to begin assembling!

Spray a 9×13 glass baking dish with cooking spray (get the sides too!) and sprinkle on 2 TBS of breadcrumbs. Roll it around to coat the whole dish.

Spread half of the rice mixture on the dish and up the sides.  Then, add your meat sauce!

Sprinkle with 3/4 cup mozzarella cheese, then spread the remaining rice on top and press till even.  Put the remaining sauce over the top.  You may have to use a little more than what the recipe calls for.

Top with remaining 2 TBS. Bread Crumbs.

Top with remainder of mozzarella.  Yeah, doesn’t look like that much does it? That’s because again, this is a “healthy” recipe.  So to realllllly make it good I would cover the whole top with mozzarella and not just this little pissy amount.  But I have to get into a bathing suit in a few weeks.  Ugh…it is what it is.  

Cover it with foil and pop it in a 400 degree oven for 30 minutes!

Sicilian Rice Ball Casserole

Ingredients:

2 cups uncooked long grain rice
1 3/4 teaspoons kosher salt
1 (2.5 oz) sweet Italian sausage link, casing removed
10 oz (.65 lbs) 93% lean ground turkey
1/4 cup onion, minced
black pepper
5 oz frozen peas
2 cups homemade tomato sauce
1 large egg, 1 egg white
1/2 cup pecorino romano (or parmesan)
cooking spray
4 tbsp seasoned breadcrumbs, divided
1 1/4 cup shredded part skim mozzarella
fresh parsley or basil, if desired

Directions:

Cook rice with 1 teaspoon kosher salt according to package directions. Set aside to cool.

Meanwhile, sauté sausage meat; cook until brown breaking up into pieces with a wooden spoon as it cooks. Add turkey and onions and cook until browned, breaking up as it cooks. Season with 3/4 teaspoon salt and black pepper to taste, then add peas and 1 cup sauce; simmer on low, covered, about 20 minutes.

Preheat oven to 400°F. In a large bowl combine cooked rice, pecorino romano, eggs, and 1/2 cup tomato sauce and mix well. Rice should be a bit sticky.

Spray a 9 x 13 casserole dish with cooking spray, making sure to spray sides too. Add 2 tbsp breadcrumbs to the dish and roll around to coat the bottom and sides.

Take half of the rice mixture (a little more if needed) and cover the bottom of the dish and up the sides; press to form the bottom layer. Fill with the meat and peas.  Top with 3/4 mozzarella cheese.  Then cover with remaining rice and press till even. Top with remaining sauce, remaining 2 tbsp breadcrumbs, and remaining 1/2 cup mozzarella.

Cover with foil and bake 30 minutes, until hot. Garnish with parsley or basil if desired, cut into 8 pieces and serve.

I cannot say enough about this stuff.  It’ll run you about $10-12.00.  Cheap and amazing! Even when I put on other sunless tanners before bed…if I’m going out the next day and exposing my legs, I will put this on over it.  It enhances the color so much and gives you this amazing shimmer as well.  Also, if you forget to use sunless tanner and your legs are white as a ghost….put some of this on and head out the door!  I use the MEDIUM GLOW color.  It’s seriously the BEST! Half the time when I try to find it it’s sold out.  Get it here! 


2.  Esqido Lashes-BFF Mink False Eyelashes

Va Va Voom!  Hello Sexy Mama!  These things are the bomb.  They will set you back around $50 if you buy the glue they sell.  (Which I recommend.)  However these are top of the line eyelashes.  They look incredible and with some tweeking you won’t even know you are wearing them.  Plus you can use them over and over again if you take care of them.  I like the particular ones called BFF however if you check out their website they have several different options.  BFF is definitely more for “going out.”  When I do wear them I feel sexy and so will you!  Get them here!

3.  Rodan+Fields Micro-Dermabrasion Paste

This stuff will knock your socks off.  After just one use your skin will feel like a baby’s behind.  FOR REAL. 9 times out of 10 when I give out a sample of this stuff they become a customer of mine.  It’s THAT GOOD.  Exfoliating your skin is one of the single most important things you can do. Use  this stuff intermittently to enhance cell turnover and improve skin tone and texture. A couple years ago I walked into Sephora and asked them for a good BB Cream aka Beauty Balm.  A young man walked me over to the Stila counter and pointed straight to this!  “David Beckham uses this and it’s the BEST” he said.  My first thought was…Okay why would David Beckham wear BB Cream?  My second thought was, I don’t give a shit if David Beckham wears it.  I just want something good!  Well kudos to David Beckham and his BB Cream because this stuff is pretty friggin amazing!  I have wore it everyday for a couple years now.  It’s super lightweight and gives your skin this incredible glow!!  Throw your foundation in the trash and get this.  It also lasts forever!  Sadly, Sephora doesn’t carry it anymore but Ulta or any department store does! Get it here!


5.  BENEFIT:  Watt’s Up! Cream Highlighter & They’re Real! Lengthening Mascara

Ahhhh these are definitely two of my fav’s!!!  Watt’s up! will give you this soft, luminous glow.  It’s great for summer, however I use it all year round.  You apply it to your cheekbones and it gives you a fabulous subtle shimmer!

They’re Real! Mascara isn’t an award winner for no reason.  It’s AWESOME!  I used to use DiorShow before this and found it hard to maneuver.  This is super easy and looks flawless every time.  Really plumps up your lashes!!  Get yours here!


 

6.  BIG SEXY HAIR Dry Shampoo

Don’t feel like washing your hair?  No problem! I LOVE THIS stuff and I take it with me everywhere.  It absorbs impurities, excess oil, and product build-up and creates instant volume and texture.  It ALSO contains UV filters to protect hair against damaging sun rays. I’ve tried several dry shampoo’s and this one is my fav!  It’s on sale right now at ULTA too.  Score! Get it here!

Well obviously I’m a big R+F fan.  BUT THIS…well, this is just a miracle worker.  Exfoliation is so, so important when trying to achieve flawless skin.  This tool has been featured in countless magazines and most recently the show The Doctors.  It’s all that it’s cracked up to be and more.  Use it once a week for 5 minutes and it removes millions of dead skin cells, revealing fresh, new skin.

When you don’t exfoliate your skin…it’s like watering the grass with out raking the leaves first!  You have to get rid of all that stuff on top to really get deep down.  This is pretty much an at-home microdermabrasion tool and it’s worth every penny.  I haven’t gotten a facial in years.  There is no need to.The proof is in the filter where you can see the dulling, dead outermost skin cells and debris that have been covering up your best skin. 8.  St. Tropez Instant Tan

There are a lot of sunless tanners out there that take hours before the color shows up.  Sometimes I forget to put it on in the morning if I am going out that night.  And other times I want color in the morning… but I don’t want to sleep in fake tanner.  It grosses me out!  Brace yourselves…(if you haven’t heard of this already!)  St. Tropez Instant Tan!  The BEST!!!!!  Apply it right before your makeup and get a perfect tan.  Washes off with soap and water which I love.  I use this ALL THE TIME!  Seriously one of my favorite products.  Get yours here!


9.  Tinkle Razors

Ahhhhh the famous Tinkle Razors.  Quite a name I know.  So do we have any Bachelor fans out there?  Well, years ago during Brad Womack’s season (you know the guy who didn’t pick anyone and then later went on to appear AGAIN and proposed to Emily Maynard?)  Clearly I’m a fan of the show.  Soooooo, there was a girl on the show named Michelle Money and I found a video of her online a while back shaving her “peach fuzz” off with these razors.  I had to try it because I had a few little hairs I wanted to get rid of…ehhh hemmm above my lip.  She’s genius!!  These cost $3.00 and they get the job done!  I shave my whole face with these and I love it!  Your skin will feel soo unbelievable soft.  Contrary to popular belief-it will NOT grow back harsher.  Try it.  You will be hooked I promise 🙂


 

10.  Rodan+Fields REDEFINE Multi-Function Eye Cream

11.  NARS Radiant Creamy Concealer

I have tried numerous, numerous concealers.  A girl brought this amazing one to my attention in Sephora a while ago.  Love, love, love!!!  It has awesome coverage but doesn’t look to “thick.”  It’s great to use also for highlighting and contouring.  I use the color custard!  Get yours here!


 

12.  Spangle Body Wash Infused Buffer

Ohhhhhhhh these are sooooooo nice!!!!  My sister in law gifted me with one of these babies for Christmas.  I use “Coconut Verbena.” It’s basically a sponge with soap in it.  You can use it around 15-20 times before you toss it.  Smells divine!  Leaves your skin feeling soft and beautiful.  Great for anyone in a hurry too!  Order yours here! or Anthropologie sells them.


13.  Rodan+Fields Amp Md Roller

Peanut Butter Banana Swirl! Your new favorite “Ice Cream.”

I scream, you scream, we all scream for Banana “Ice Cream!”  Except it’s not ice cream.  It’s blended frozen fruit and milk that turns into this amazing, fluffy goodness.  You honestly *think* your eating something fattening and delicious.  This is my FAVORITE go-to healthy dessert. What’s not to like?  Bananas, peanut butter…nom nom! I don’t know about you, but once a banana starts to get remotely brown..I cannot eat it!  I used to toss em’ in the trash.

If it were up to me I would eat a bowl of pasta and a piece of bread every night for dinner.  No veggies, no meat.  Just carbs.  I like to call myself a “curvaceous carb eater.”  Life is too short.  Eat the damn bread.  Then go do some pilates afterwards.  I pretty much judge a restaurant by how their bread basket is.  If the bread sucks, they’ve already lost me.  Don’t even bother bringing the main course.  When I was little my grandparent’s used to take me to this restaurant where each piece of bread was individually wrapped in plastic.  You know, so they didn’t have to throw the bread away after removing it from the table.  That’s all I’m gonna say about that.  But I’ll tell you what, I would give anything to be eating that plastic wrapped bread again if it meant one more meal with my Grandma and Grandpa.

Anyways, I’ve always been a “good eater” (according to my mother) since the day I was born.  Shocker!  When I have to “watch it” I truly hate my life.  I want to have a delicious dinner and dessert.  Then 2 hours later I want to sit my big ass on the couch with a HUGE bowl of Skinny Pop and a glass of red wine.  Is that too much to ask?  Moderation just sucks.  When someone says…”everything in moderation” I want to bitch smack them.  How do you eat just ONE warm chocolate chip cookie when they come out of the oven?  I mean, especially if you buy the one’s in the package that are already pre-cut.  Those things are tiny!  It’s BS.

I’m not a salad girl.  Never have been, never will be.  My mom is pretty much the worst person EVER to go out to eat with. “Um yes, I’d like a spinach salad please with a piece of grilled salmon.  And make sure they don’t use any oil or butter.  No seasoning either, just salt and pepper.  And um, I have celiac disease and I can’t have gluten so please don’t put any croutons on there.  And I know I just told you that I have celiac disease but can you please let the chef know because it has to be cooked a certain way?  And I don’t need any salad dressing.  Please bring me vinegar and oil.  And I’m also allergic to shellfish so make sure there is nothing in there.”  And I keep thinking “ARE YOU FUCKING KIDDING ME?” Don’t even bother asking her to ever split something. (Sorry mom…lol.)

Well now that I’ve totally gone off subject.  Looking for something quick and figure friendly to make for dinner?  Try these!  I could eat Mexican food at least 4 days a week.  It’s a pretty close second next to Italian. I make these mini taco salads for Chase and I all the time.  They are yum, yum, yum!  Low fat and healthy too!  Whenever I’m trying to “watch it” this is one of my go-to recipe’s.  It’s satisfying and delicious.

Here is what you need:

I make my own Taco Seasoning and SO SHOULD YOU.  It’s sooooo much better than buying it.  The store bought stuff is full of additives (MSG, Citric Acid and lots of hidden things…it’s GARBAGE.) Make a big container and you will have it readily available anytime!  See below for the recipe.

Grab 4 sheets of Reynold’s Wrap and make small balls.  Put them on a baking sheet.

Place a corn tortilla on top of each foil ball.

Spray each tortilla with Grapeseed Oil and pop them in a 400 degree oven for 10-15 minutes.  There are no propellants in this.  I don’t use PAM anymore, that stuff is NO BUENO.  You can use any kind of oil you like…it gives the shells a nice crunch.

Chop up your toppings!  Get some green onion in there…I was out!

Cook the ground turkey over medium high head, breaking it up with a wooden spoon.

Once the meat is browned, add your taco seasoning.  I used about 3 Tablespoons.  Taste it and see if you want more/less.  The more you use the spicier it will be!

Add a few tablespoons of water.  If it’s too thick, add more water.  If it’s too thin, add more seasoning!  Adjust it to your liking.

Voila!  You are ready to assemble.

When the corn tortilla’s are done they will look like this!  Feel them before you take them out of the oven.  Make sure they are not soft at all.  If you need to broil for a minute at the end, go ahead!

Spread some refried beans on the bottom of each shell.

Add all of your toppings!

 

RECIPE:

Mini Taco Salads

  • 1lb.  Lean Ground Turkey (I use 93% Lean)
  • 1 Tomato, chopped
  • Green Onion, chopped
  • Cheddar Cheese, grated
  • 3-4 TBS Taco Seasoning
  • Corn Tortillas
  • 1 Avacado
  • Iceberg Lettuce
  • Cooking spray/oil of your choice
  • 4 TBS Water
  • Refried Beans
  • Sour Cream

Pre-heat oven to 400 degrees.  Make foil balls and put on a baking pan.  Spray with cooking spray.  Bake for 10-15 minutes or until lightly brown around edges.

Put Turkey in a non-stick skillet and cook over medium high heat for 6-8 minutes, breaking up with a wooden spoon.  When meat has browned, add the taco seasoning and water.

Remove corn tortillas from oven.  Spread refried beans on the bottom.  Add lettuce, turkey and the rest of your toppings!  Enjoy 🙂

 

Gone are the 1950’s housewives.

I remember way back when before I had kids, I used to judge other mothers.  I couldn’t understand why some stay at mom’s looked like they crawled out of a cave and wore a baseball cap everyday.  Why would they totally let themselves go?  Surely their husbands must be cheating on them I thought.  How hard could it be to dress decently and throw a little makeup on? Fast forward 4 years…I’m that mom.  The one I used to judge.  The one who looks like she crawled out of a cave.  And the one who’s house looks like a bomb went off.  EVERY.  SINGLE.  DAY.  Baseball caps are my best friend. All I can say is that you are ignorant to what you know nothing about.  And that statement holds true for everyone and everything.

Years ago my grandma (God rest her soul) said to me, “you know why all these men have affairs?  Because their wives look like shit everyday!”  NO JOKE.  I remember thinking, “well that would never be me.  I care too much about how I look.” She went on to say…”A man doesn’t want to come home to his wife looking like a train wreck after a long day at work.  Before your husband gets home from work, change your clothes, do your hair, put some lipstick and heels on!” Mind you this is coming from a woman who had 5 CHILDREN, 4 of which were boys.  I used to think she was right.  Before I had kids of course.  I do agree that it’s nice to get yourself together when you can.  It’s good for YOU too.  However she came from a totally different generation.  I just can’t imagine how someone could stay home with 5 children and have to time to keep a clean home, look good and cook a decent meal.  Hell I’m lucky if I make the bed and give my kids frozen nuggets for dinner! And I only have 2!

So anyways, I wanted to share my new obsession.  And my favorite comfy outfit for all ladies, especially mama’s who want to be cute and comfortable.  I’m actually wearing this while I write this post! Gone are the days of the June Cleaver dress.  Hello LuLaRoe!

My best friend Jaclyn has been raving about these new leggings for months.  I had never heard of them.  I’m not really a leggings person because I hate tight clothes.  Sure they look cute but are they super comfortable?  Not really.  And I’m all about comfort these days.  They are by LuLaRoe.  They have lots of fun patterns.  Some I am not crazy about.  But some are really, really cute.  They also have solids and a lot more clothes besides leggings.

Anyways, THEY ARE THE MOST COMFORTABLE THINGS I HAVE EVER WORN.  I’ve become obsessed with them.  I want to wear them everyday.  And I only have two pairs which I paid between $20-$25 for (cheap!).  This particular brand is about comfort for women of all shapes and sizes.  I can honestly tell you that you will never find leggings more comfortable than these. An Ode to the Capital Grille Stoli Doli

10 years ago when I met my husband, he used to take me to the Capital Grille in Troy, MI all the time for dinner.  It was actually where we had our second date AND our first kiss.(All together now, awweeeee.)  Little did I know when he was wining and dining me that he didn’t have the money to take me there.  He was still in college and working for his dad.  Later on he told me that he opened up a 0% interest credit card just to take me there on our second date!!  I was like “are you crazy??” It didn’t matter to me.  I would’ve gone anywhere with him. He was clearly trying to impress me…and it worked. Haha! Amongst other things of course.

So anyways, it was at the Capital Grille that I had their famous “Stoli Doli” aka Pineapple Martini made from Stolichnaya Vodka and pineapple that’s been marinating for a couple weeks.  The results:  One incredible martini!  It was amazing.  And it totally knocked me on my ass!  (More than once.) Strong is an understatement.  But it doesn’t taste strong because the pineapple masks the vodka taste. So you drink, drink, drink away until…you’ve suddenly fallen off the chair! I’ve seen the repercussions from this drink from many people.  Hilariously bad.

One of my hubby’s good friends has been a bartender there for years!  He came for a visit here in Nashville a couple years ago, so naturally I had to ask him how to make this spectacular concoction.  Say hi to Satish.

Now you don’t have to make a HUGE jug of it like we did.  I was having a party in a couple weeks so I needed to make a lot.  It’s perfect for large crowds and it looks pretty!  You just have to make it ahead of time because it has to sit and ferment for a couple weeks.

All you do is grab your favorite container (a spout would be helpful!), some pineapple and Stoli Vodka.

NOTE:  Maybe put out a warning sign for your guests.  1 or 2 Stoli Doli’s per guest max!  Otherwise, these are the kind of things that could happen to you……..

You throw your inhibitions to the wind.  Myself on stage at Tootsies with a sweaty guitar player wrapped around me.  I made sure not to drop my flower or my Miller Lite though.  Kudos to me! So anyways, you get the point.  STRONG, STRONG.  But deliciously worth it.  You are drinking straight vodka so keep it in moderation.

Here’s how you make it:  

  1. Chop up the pineapple!  Doesn’t have to be like Satish did it.  It just looks nice.  Cut it into large flat pieces and layer it.  ^^^ See above.  You need several pineapple to do this.  Depending on how much you want to make!  We used about 6 pineapple and 3 half gallons of vodka.
  2. Pour in the vodka!  Make sure you cover all of the pineapple.
  3. Close it up and let it sit for 12-14 days.  This is the hardest part.
  4. When it’s done, pour it all into another container that you can keep in the refrigerator.
  5. Add some ice to a shaker and pour desired amount of vodka in.  Shake it good!  Pour into a frosted martini glass and garnish with pineapple.

Mmmmm.  Enjoy that frothy, pineapple goodness!  It will be good in your refrigerator for a couple weeks.

Needless to say this martini and the Capital Grille both have a special place in my heart!  Lot’s of good memories there with great people.
