When my husband and I were with out our precious cherubs…aka Carter and Christian, I used to cook ALL the time. I was new to Nashville and didn’t have a job. I would make homemade pies, pasta’s, you name it! I was constantly trying new things. Back when we were just engaged, I used to be online looking for new recipes to try for my future hubby. We never lived together before we got married…so I couldn’t wait to be co-habitating and make him all of this yummy food. I can hear my feisty grandma in my head now…”Now why would you want to move in with a man before you got engaged? That’s bullshit. He’ll never marry you! And then, what do you have to look forward to once you get married? It goes back to the way it was! There’s no excitement. It’s….okay let’s get married and then go back home. So you see there is no sense in “playing house” now. Wait till you got a ring on your finger and then get married.” Hahaha, God bless that woman. She was smart though. And I do agree with her to some extent. Needless to say I came from an old fashioned family. I always tease my husband and say, “I would encourage our boys to move in with a girl before they got married. Because if I would’ve known that you couldn’t change a light bulb or boil noodles, or pick up your underwear off the floor…things may have been different.” Hahaha. Ok I’m kidding. Chase is good at many things. When it comes to being domestic and handy, forgetta bout it.
So anyways, where was I? Well, this pasta didn’t really get me engaged. That was a joke. However I think that once Chase realized after eating this deliciousness what a fabulous creature he had in front of him, he wasn’t turning back!
Behold, the 5 ingredient pasta! LEMON SPAGHETTI. So if you don’t like lemon’s your not gonna like this pasta! Clearly. People go crazy when I make this. Except for my mother…she hates it. Which is pretty typical. “Lemons don’t belong in pasta!” This is a recipe I discovered about 8 years ago from Giada. I love really light pasta dishes with minimal ingredients. Giada has a few of them. This one is amazing! Goes really well as a side dish too. Chase likes to devour it as a main course with a piece of crusty bread. The boys enjoy it too, which is a rarity. I love the simplicity of it. Really good leftover too. Anything you can make in advance is a winner in my book. Make the sauce ahead of time and then when your ready to eat just boil the noodles and put it together. Super fast. So make it! You’ll love it. It’s the #1 most requested dish in my house and Chase and Carter’s FAVORITE pasta.
